THE AROMA OF FRESH BREAD FILLS THE ROOM. IN THE OVEN, TWO LOAVES OF SOURDOUGH ARE SLOWLY BAKING. On the kitchen table, there are chocolate chips, lemons, praline, and a selection of colourful Vertuo capsules... You don’t have to search very hard to find out how Déborah Gillyns relaxes. For as long as she can remember, this 28 year-old woman has been passionate about food, and baking in particular. “When I was five, I baked my own birthday cake”, she confesses with a smile. “And I’ve never stopped baking since. After uni, I wanted to open my own restaurant, but instead I worked at Sang-Hoon Degeimbre in Brussels for a year and a half. It was a rewarding experience that cemented my vocation: chocolate. I started a chocolatier course a year ago. Once I finish, I’ll open a chocolate shop in the USA, in Brooklyn.” Sitting in the pale late autumn light, an Arondio cappuccino in hand,Déborah is circumspect as she talks about her status as an influencer and her 28,000+ followers on Instagram (@debbyfoodilicious). “The visibility isn’t an end in itself. I mainly use it to promote my work with chocolate and to share my experience with people looking for inspiration. I help them discover the amazing Vertuo coffees, for example. What is the crema?

It’s that dense golden foam that covers
the coffee and distinguishes an espresso from other
forms of extraction. Coffee-lovers particularly
like the contrast between the strong coffee and the delicate crema. When we developed Vertuo,
we wanted to create high-quality long extractions,
but also add a touch of originality,
something unexpected in larger cups.
The crema immediately appeared
as the solution to this challenge.
We took the iconic standards of the espresso
and transposed them onto longer extractions,
for the perfect tasting experience.

What makes a good crema?

It needs to be made up of tiny bubbles.
It should be generous, and remain stable while you drink.
For baristas, the crema is the sign of a successful extraction.
It is also often used as the benchmark for configuring
their percolators.

Why is it so important for coffee-tasting?

Visually, first of all, the crema awakens the senses.
It helps to free the aromas. It gives the coffee a more
pronounced fragrance as the roasted notes are pushed
to the fore. This is due to the presence of
microbubbles that, as they pop, free their full flavour
and give you that full aromatic experience.
The crema also affects the taste.
It gives a creamy mouthfeel which also helps
you appreciate the roasted notes.

What should it look like?

First of all, you need to look at the colour and the
size of the bubbles. The crema shouldn’t be too
thin and should cover the whole surface
of the coffee. You can use a transparent glass
to easily measure it. Also listen to the crema before
sampling your brew. It’s almost as if it sings.
Bring your ear near the cup and
you’ll hear little bubbles popping.

How can you combine crema and milk?

For great latte art in your cappuccino and a real
contrast in colours, you need a good quality crema.
During tasting, the crema and the milk foam
will blend together for a perfect
gourmet balance.

What are the mistakes to avoid?

The crema should be an integral part of your
coffee ritual. There are no good or bad habits.
Appreciate its appearance, mix it with the coffee,
or taste it with a spoon... Personally,
I like to stir the bottom of my cup to release
all of the crema it contains, and savour
it to the very last drop.

Passion for Colombian Coffee with Master Origin Colombia

The full richness of Colombian coffee and passionately grown beans give this new recipe an Amazonian feel, concocted with 100% Fairtrade Master Origin Colombia.

Ingredients

  • 1 capsule of Vertuo Master Origin Colombia (230ml)
  • 1/2 passion fruit
  • 20ml passion fruit syrup
  • 7 ice cubes.

Preparation

  • Pour the passion fruit syrup into a Recipe Glass
  • Add 7 ice cubes
  • Press the passion fruit pulp and add to mix with seeds
  • Pour Master Origin Colombia straight over it all.

Blonde chocolate viennois with Barista Creations Bianco Leggero

A thick layer of whipped cream atop 80ml of Barista Creations Bianco Leggero, topped with white chocolate chips... This extravagantly decadent Viennois is sure to make an impression.

Ingredients

  • 1 capsule of Vertuo Barista Creations Bianco Leggero (80ml)
  • 100ml of liquid cream
  • 2 squares of Nespresso white chocolate with caramel

Preparation

  • Pour an extraction of Barista Creations Bianco Leggero into a Vertuo double espresso glass
  • Add 100ml of cream in a siphon and puncture one gas canister
  • Shake
  • Top the coffee with whipped cream
  • Grate the Nespresso white chocolate with caramel over the cream.
