The origin

It takes some guts: Colombian farmers only harvest the berries when they have an almost deep purple color and are heavily hanging from the branches. Before the berries are harvested, the fruit sugars penetrate deeper into the core of the coffee bean every day. It is crucial to pick exactly on time, not a day too early, but certainly not too late. Master Origin Colombia consists entirely of this unique late harvested coffee.

Late harvested Arabica

Since coffee has grown in Colombia, farmers process the beans in the traditional way: via the wet or washed method. We wanted to know what would happen if we left the berries on the plants longer than usual. Would we be able to deepen or strengthen the fruit notes? We first had to convince farmers that it was worth taking this risk. If berries hang on the plants for too long, they could become moldy or even begin to ferment. If you pick them too quickly, the taste will remain sharp and sour. It takes years of experience to harvest the berries at exactly the right time and now we asked the farmers to go against their feelings. The result: a fruity and sparkling coffee.
