déborah gillyns’ VERTUO MOMENT

When I come back from the gym,
where I go every day, I like to make an
Arondio cappuccino in a 230ml Vertuo mug.
I make it with lactose-free or soy milk.
When I’m cooking, I like to make a Hazelino

THE AROMA OF FRESH BREAD FILLS THE ROOM. IN THE OVEN, TWO LOAVES OF SOURDOUGH ARE SLOWLY BAKING. On the kitchen table, there are chocolate chips, lemons, praline, and a selection of colourful Vertuo capsules... You don’t have to search very hard to find out how Déborah Gillyns relaxes. For as long as she can remember, this 28 year-old woman has been passionate about food, and baking in particular. “When I was five, I baked my own birthday cake”, she confesses with a smile. “And I’ve never stopped baking since. After uni, I wanted to open my own restaurant, but instead I worked at Sang-Hoon Degeimbre in Brussels for a year and a half. It was a rewarding experience that cemented my vocation: chocolate. I started a chocolatier course a year ago. Once I finish, I’ll open a chocolate shop in the USA, in Brooklyn.” Sitting in the pale late autumn light, an Arondio cappuccino in hand,Déborah is circumspect as she talks about her status as an influencer and her 28,000+ followers on Instagram (@debbyfoodilicious). “The visibility isn’t an end in itself. I mainly use it to promote my work with chocolate and to share my experience with people looking for inspiration. I help them discover the amazing Vertuo coffees, for example. The range is so varied, from really fruity to more full-bodied. It’s easy to come up with loads of gourmet pairings... with chocolate, of course!

My Vertuo Plus Titane machine is really easy to use. You just press the button and it takes care of the rest. It also makes really big coffees, and that’s perfect for me as I like to drink coffee with milk.”

I’VE ALWAYS LOVED BEING THE HOSTESS, HAVING FRIENDS ROUND Making some food and creating a warm atmosphere so everyone can relax. I think that’s what makes me feel at ease most, being close to my loved ones and enjoying unique moments with them.” And this passion for food that brings people together is far more than just a mo. o for Amylia De Schepper. Her 18,000 followers on Instagram (@cookameal) and the 30,000 monthly visits to her Cookameal blog have seen the young thirty-something create a real community. Through her recipes and travel tales, she sketches a landscape full of smiles and human warmth, affirming the joys of “framily”, all those people who defy the border between friends and family. “I work in a bank and my husband is a DJ. We have very busy lives so I try to make the time we spend together really count. There’s nothing like a Sunday brunch for two, with a nice cup of coffee and my famous waffles to get our fill of positive energy. The new Vertuo capsules are perfect for this. The Vertuo Plus machine adjusts the temperature to the type of coffee, and we get to enjoy a long extraction that stays nice and hot all the way to the bottom.” Amylia lives in Antwerp and works in Brussels. To escape from the commuter rat race, she travels by bike and train.

She takes it easy on her bike to Berchem station, bringing her Vertuo Travel Mug, and then uses the train journey to dream up her next recipe, and make some notes and outlines for stories and posts for her blog.

LEAVING HIS HOME REGION OF GARD (FRANCE) BEHIND, HE MOVED TO BRUSSELS IN 2011 TO STUDY ARCHITECTURE AT LA CAMBRE And Amaël Hazza never left. “I was looking for a vibrant but accessible city. And that’s what I found here. Architecture is my passion and my profession. I’m a city-boy at heart. I like to grab my Fuji XT-20 and roam the streets photographing buildings. It takes time to uncover the secrets of a building, tower block, or house. Time to lose yourself, too, and achieve a kind of serenity, let it all soak in.” The pure, vibrant beauty of Amaël’s photos resulted in an Instagram profile (@a_m_a_d_e_u_s) with 38,000 followers. “This social media success came to me by surprise. Nowadays, I limit myself to one photo every day. If I posted everything I shot there’d be a deluge of images.” n the shelves of his apartment in Anderlecht, Rencontres d’Arles brochures stand alongside issues of the Ideat design magazine, and a gleaming new Vertuo Plus Silver co. ee machine. “I’m a coffee fanatic. When I was li. le, my parents let me dip my biscuits in an Americano. I’ve always been fond of these roasted, bitter flavours. I love the new Vertuo range. The extractions are perfect, with an amazing dense, rich crema. It’s easy to make exactly the coffee you want, from a quick espresso to a lungo, depending on the time of day. With everything I buy, I place great importance on the environmental and Fairtrade aspect. This is especially true for products that come from far away. The Fair Trade certification is essential. That’s one of the reasons I like Master Origin Colombia.

THE ART OF CREMA

The secrets of this
legendary foam

That delicate layer of light brown foam that tops your Nespresso coffee: where does it come from?
Why is it important? How can you get it?
Britta Folmer, Coffee Science & Nutrition Manager at Nespresso, knows all there is to know.
And she’s here to answer all of your questions.

6 facts about crema you
didn't know yet

What is the crema?

It’s that dense golden foam that covers
the coffee and distinguishes an espresso from other
forms of extraction. Coffee-lovers particularly
like the contrast between the strong coffee and the delicate crema. When we developed Vertuo,
we wanted to create high-quality long extractions,
but also add a touch of originality,
something unexpected in larger cups.
The crema immediately appeared
as the solution to this challenge.
We took the iconic standards of the espresso
and transposed them onto longer extractions,
for the perfect tasting experience.

What makes a good crema?

It needs to be made up of tiny bubbles.
It should be generous, and remain stable while you drink.
For baristas, the crema is the sign of a successful extraction.
It is also often used as the benchmark for configuring
their percolators.

Why is it so important for coffee-tasting?

Visually, first of all, the crema awakens the senses.
It helps to free the aromas. It gives the coffee a more
pronounced fragrance as the roasted notes are pushed
to the fore. This is due to the presence of
microbubbles that, as they pop, free their full flavour
and give you that full aromatic experience.
The crema also affects the taste.
It gives a creamy mouthfeel which also helps
you appreciate the roasted notes.

What should it look like?

First of all, you need to look at the colour and the
size of the bubbles. The crema shouldn’t be too
thin and should cover the whole surface
of the coffee. You can use a transparent glass
to easily measure it. Also listen to the crema before
sampling your brew. It’s almost as if it sings.
Bring your ear near the cup and
you’ll hear little bubbles popping.

How can you combine crema and milk?

For great latte art in your cappuccino and a real
contrast in colours, you need a good quality crema.
During tasting, the crema and the milk foam
will blend together for a perfect
gourmet balance.

What are the mistakes to avoid?

The crema should be an integral part of your
coffee ritual. There are no good or bad habits.
Appreciate its appearance, mix it with the coffee,
or taste it with a spoon... Personally,
I like to stir the bottom of my cup to release
all of the crema it contains, and savour
it to the very last drop.
