The climate on Sumatra is extremely humid, which is why farmers have developed a unique processing method that is only found in Indonesia: "wet hulling". It makes it possible to let coffee dry faster. Farmers harvest the ripe coffee berries and de-pulp them. After fermenting overnight, the beans are washed the next morning and stripped of their thin film while they are still wet, at a humidity of about 40%. The beans come out misshapen and crushed from this entire process. They have a milky blue-green color, but a seductively sweet and fresh scent.
