Pomelo Passion with Caramelito
Zest the pomelo in long strips and simmer the zest in the sugar syrup in a pan for 20 minutes.
Remove the zest from the pan, set aside and arrange the presentation like noodles.
Pour the sugar syrup, rice wine and soy milk into the Aeroccino milk frother and press the hot milk froth button.
Pour the milk froth into a ritual recipe glass.
Pour the coffee on top.
Drizzle with caramel and garnish with pomelo zest and the crushed sesame cracker.
