Preparation

  • Zest the pomelo in long strips and simmer the zest in the sugar syrup in a pan for 20 minutes.
  • Remove the zest from the pan, set aside and arrange the presentation like noodles.
  • Pour the sugar syrup, rice wine and soy  milk into the Aeroccino milk frother and press the hot milk froth button.
  • Pour the milk froth into a ritual recipe glass.
  • Pour the coffee on top.
  • Drizzle with caramel and garnish with pomelo zest and the crushed sesame cracker.
