Directions

Pasta

  1. Blend pasta dough in food processor for 1 minute.
  2. Blend for 5 minutes and let it rest for 20 minutes.
  3. Roll pasta and cut into tagliatelle, set aside, covered and tossed with flour.

Ragu Sauce

  1. Chop celery, carrot and onions into a fine dice.
  2. Sweat vegetables in pan for 5 minutes.
  3. Add garlic and minced beef.
  4. When beef is caramelised, add paprika, cumin and chilli flakes and fry till aromatic.
  5. Deglaze fond with Arondio Nespresso coffee, then add tomato puree and paste to taste.
  6. Add in herbs except parsley and basil.
  7. Let flavours develop in sauce over a low simmer for at least 30 minutes, stirring from time to time.

Assembly and Plating

  1. When Sauce is ready, cook tagliatelle in salted, boiling water for 1 minute and transfer to a portion of sauce in a saucepan.
  2. Plate pasta and top with parsley leaves, grated pecorino romano cheese, lemon zest and a squeeze of lemon juice.
