Ingredients
- 2 Arondio Vertuo Coffee Capsule
- Ragu Sauce
- Pasta

- VERTUO Gran Lungo Cup (265ml)
- Nespresso Vertuo Coffee Machine
Directions
Pasta
- Blend pasta dough in food processor for 1 minute.
- Blend for 5 minutes and let it rest for 20 minutes.
- Roll pasta and cut into tagliatelle, set aside, covered and tossed with flour.
Ragu Sauce
- Chop celery, carrot and onions into a fine dice.
- Sweat vegetables in pan for 5 minutes.
- Add garlic and minced beef.
- When beef is caramelised, add paprika, cumin and chilli flakes and fry till aromatic.
- Deglaze fond with Arondio Nespresso coffee, then add tomato puree and paste to taste.
- Add in herbs except parsley and basil.
- Let flavours develop in sauce over a low simmer for at least 30 minutes, stirring from time to time.
Assembly and Plating
- When Sauce is ready, cook tagliatelle in salted, boiling water for 1 minute and transfer to a portion of sauce in a saucepan.
- Plate pasta and top with parsley leaves, grated pecorino romano cheese, lemon zest and a squeeze of lemon juice.
