PREPARATION
- Preheat oven to 180C.
APPLE FILLING
- Toss the apples in a bowl with sugar, lemon juice, cinnamon and nutmeg until evenly coated.
- Cook the apple in a covered frying pan over medium high heat for 3 minutes. Then uncover and increase to a high heat, stirring for another 3-5 minutes until juices are reduced.
- Remove from the heat and set aside.
ASSEMBLING
- Cut the pastry sheet into 16 equal rectangular pieces.
- Evenly distribute the apple onto 8 of the rectangular pieces.
- Lay the remaining 8 pieces on top and press down all of edges with a fork to seal.
- Whisk 1 egg and brush the pastry. Bake for 12-14 minutes, or until golden brown.
COFFEE GLAZE
- Combine all glaze ingredients and whisk until smooth. Drizzle on the warm pastries and serve.
