Apple Dolce with Coffee Glaze

PREPARATION

  1. Preheat oven to 180C.

APPLE FILLING

  1. Toss the apples in a bowl with sugar, lemon juice, cinnamon and nutmeg until evenly coated.
  2. Cook the apple in a covered frying pan over medium high heat for 3 minutes. Then uncover and increase to a high heat, stirring for another 3-5 minutes until juices are reduced.
  3. Remove from the heat and set aside.

ASSEMBLING

  1. Cut the pastry sheet into 16 equal rectangular pieces.
  2. Evenly distribute the apple onto 8 of the rectangular pieces.
  3. Lay the remaining 8 pieces on top and press down all of edges with a fork to seal.
  4. Whisk 1 egg and brush the pastry. Bake for 12-14 minutes, or until golden brown.

COFFEE GLAZE

  1. Combine all glaze ingredients and whisk until smooth. Drizzle on the warm pastries and serve.

    Apple filling
  • 2 cups Granny Smith apples: peeled, cored and diced
  • 3 tablespoon demerara sugar
  • 1 teaspoon fresh lemon juice
  • Pinch of cinnamon
  • Pinch of nutmeg
  • 2 sheets of puff pastry
  • 1 Egg
    Coffee Glaze
  • 1 cup pure icing sugar
  • 1 Tribute to Milano coffee capsule extracted as a 25ml Ristretto
  • 1 tablespoon honey
