Espresso Tonic
A sorbet paired with cucumbers, coffee flower jelly, espresso jelly, seasonal ume plum, thyme and kabosu

Abalone
The Abalone from Saga and kombu seaweed were steamed together for 16 hours, before serving with rye bread and creamed nettles, crispy nettles and a sauce made of foie gras, abalone liver and Nespresso coffee.
