The art of seduction
Pastry is a family affair for Joannic Taton, and more specifically a feminine tale. This love starts as a child in the Lorraine region of France, with his grandmother’s unforgettable pineapple cake. He has never left a stove since. As a teenager, he learns pastry alongside his eldest sister while she is studying in a culinary school. It is as if a golden thread of sugar unites Joannic to these inspiring women. The famous Fresson pastry shop in Jarny teaches him the art of custard desserts, cakes, ice cream, chocolate and more. In 2004, at just 23 years old, Joannic seems to be growing wings as he launches his own pastry boutique. A key experience as an entrepreneur. Then a call for the South and the hotel world. He goes to Chateau Taulane, which introduces him to a new world and it is the end of small boutiques. Since 2010 he has joined Davy Tissot at Les Terrasses de Lyon at La Villa Florentine. His ethereal chocolate soufflé is a hit there. The secret: rice flour for more airiness! Let's bet that the members of the jury will be smitten by this creation presented at the Meilleur Ouvrier de France (Best craftsman in France) 2015 competition. In any case, Joannic is already a Nespresso insider winning the Café Gourmand 2013 award with his Symphonie Gourmande. His stylish and witty signature are definitively seductive.
