The little prince of pastry
Yann Couvreur's Vanilla in five sheets, his signature dessert holds all the promises of a foretold success: talent and daring youth. A rising piece that reflects its author, an ascending figure of contemporary pastry who collects prestigious names on his résumé such as the Trianon Palace or Le Carré des Feuillants. He perfects his skills with Jean-François Foucher at the Park Hyatt Paris, saying of him that he taught me the founding principles of an architectural pastry and pushed me to create without limits
. He then sails off to Saint Barthélémy headed, towards a new culinary destination: his first position as pastry chef at the Eden Rok. Back in Paris, he joins the Michelin starred Burgundy restaurant. He currently carves made to measure pieces for a parisian palace in a manner of a fashion designer, with a high taste for arts and crafts. Yann loves to work on substance, structure, texture. His compositions are sprinkled with fruity and acid notes, so many subtle hints of colour and flavour.
