The rich biodiversity, along with cold, wet ocean winds, creates a cooler climate on the Galapagos Islands than elsewhere on the Equator. This environment, together with volcanic soils, produces special coffee-growing conditions. Inspired by this land, our experts bring you an espresso with sweet cereal and biscuit notes. Our coffee comes from 6 farms on the island of Santa Cruz, located on very gentle slopes. Coffee is picked by hand, wet processed and dried in mechanical dryers.

ROASTING
A medium roasted coffee using a split roasting method: The first split has a medium roasting time and medium roasted color to keep and enhance the fruity aromas. The second split is medium to dark roasted at medium roasting time to reinforce the body and overall structure of this coffee.
AROMATIC PROFILE
Roasted, and sweet cereal and biscuit notes. Round, with some cacao-like bitterness and a full body.
