Burnt Vanilla Iced Coffee

Directions

Burnt Vanilla Infused Milk

1. Pre-heat oven to 190°C.
2. Wrap vanilla bean pod in aluminium foil and place it on a baking tray into the oven.
3. Let it roast for 7 to 8 mins, or until the vanilla bean pod puffs up.
4. Use a blowtorch to burn the vanilla pod.
5. In a blender, blend the vanilla pod with 300g of milk.
6. Transfer the burnt vanilla milk into a saucepan and heat it up to 80°C and let it infuse for at least 30mins.
7. Strain through fine mesh strainer and set aside.

Roasted Almond Syrup

1. Pre-heat oven to 190°C.
2. Roast almonds for 8 mins until browned and roasted, then crush finely.
3. While almonds are roasting, in a saucepan, heat up sugar and heat until it comes to a boil.
4. Add roasted almonds into the sugar syrup and let infuse for at least 30mins.
5. Strain through fine mesh strainer and set aside.

Iced coffee

1. Extract 230ml of Sweet Vanilla.
2. Pour coffee into the blender.
3. In the blender, add crushed ice, whipping cream and xantham gum.
4. Also add the roasted almond syrup and burnt vanilla milk into the blender.
5. Blend all the ingredients until smooth, and pour it out into the mug.
6. Finish off with whipped cream, a dusting of cocoa powder. Adding crushed almonds, and grated chocolate is an option too!
