Born in Melbourne, Shannon realised his passion for cooking from an early age. This was cemented by trips to Europe where he was introduced to the sophisticated world of restaurants.

Bennett’s passion for originality and his style of cooking secured him positions in Europe working under some of the world’s greatest Michelin starred chefs, whose discipline in their approach left a large impression.

On his return to Melbourne in 2000, at just 24 years of age, he opened his first restaurant Vue de monde. Shannon was quickly recognised for his edgy approach and established a cult following with Melbourne diners.

In recent years, Shannon has boldly set out to make Vue de monde Australia’s most sustainable restaurant. The restaurant has evolved into a more environmentally sustainable model, with more than 50 cutting-edge technologies being employed, from an E-water system to ‘cold kitchen technology’ (no exposed flames or gas). The restaurant serves wholly seasonal cuisine and uses home-grown, small-farm organic produce and recyclable products, as well as running off solar and wind power among other eco-conscious innovations.
