Extract a 40ml Espresso of a Rosabaya de Colombia Grand Cru.
Prepare your milk using either the Aeroccino with the frothing coil, or simply by pressing the Cappuccino button on your Lattissima machine.
Pour frothed milk to the top of the cup (depth of froth should be approximately 2cm).

Ingredients
- 1 courgette, peeled into strips
- 1 cup spinach, chopped
- 2 tbsp ricotta
- 3 eggs
- Knob of butter
- Chilli flakes
- Pinch of sea salt
Method
- Pre-heat the oven to 180°C.
- In a bowl combine the courgette, spinach, 3 eggs and mix well. Then gently fold through the ricotta. Season with sea salt and chilli flakes to your desired heat.
- Heat a small cast iron pan on the stove, add a knob of butter and pour in the mix. Leave to cook gently around the outside then place in the oven for 10-12 minutes until just cooked through. Remove from oven and serve.
