In 1989, Costa Rica passed a law making it illegal to grow anything other than 100% Arabica coffee beans. High altitude
Most of the country is covered by mountainous regions, and most Costa Rican coffee farms are found around 1,600 metres above sea level. These higher altitudes mean cooler temperatures, which slow down the growth of coffee plants and allow more time for the beans to develop complex and deeper flavours.
Temperate climate
The most important condition for a coffee tree to grow is a temperate or tropical climate with no frost, ample sunshine, and heavy rainfall. Costa Rica only has two seasons: dry and rainy, both of which provide ideal climates for growing coffee.
Volcanic soil
Costa Rica is rich in volcanic soil, which is fertile and full of minerals and nutrients such as potassium, phosphorus, calcium, and magnesium, enhancing the flavour profile of the coffee grown there.
Another factor that makes Costa Rican coffee special is the method by which it is processed and collected, as only fully ripe coffee beans are harvested to ensure maximum flavour. The coffee cherries are hand-picked and sent to processing plants called “beneficios” to be washed and have the pulp removed, then dried in the sun or by machinery. The dried coffee beans are sorted by size and shape and then stored in preparation for export.

The coffee in this region is grown at altitudes ranging from 1,200 to 1,800 metres above sea level, which makes it one of the country's highest coffee-growing regions. Central Valley region
The Central Valley, also known as the Valle Central, is a region that encompasses the country’s capital, San José. As such, it is the most densely populated region in the country, and its coffee farms are located at altitudes ranging from 900 to 1,600 metres above sea level. Coffee has been grown in this region since the early 19th century, making it the region with the longest coffee-growing history in Costa Rica.
West Valley region
As the name suggests, this is the westernmost coffee-growing region in Costa Rica. Also called the Valle Occidental, this region enjoys a pleasant climate year-round, with both wet and dry seasons being perfect for growing coffee. The region boasts an altitude of approximately 1,200 to 1,700 metres above sea level.
