Like a fish in water
At 28 years old, with one Michelin star and the looks of a movie star, Thibault Sombardier has a bright future ahead of him and already the ease of the greats. He plays with a neo classical répertoire and is the captain on board of Antoine, his restaurant anchored in the very chic 7th arrondissement of Paris; there since 2013, he invites us on an enchanting voyage lined with fine ports of calls such as black mullet and poutargue or gamberoni tartare and grated clementine. Designing a very personal path on a road of delights, with a promise of many discoveries. For now, Thibault's ship is docked at the foot of the Eiffel tower. As a child he visited Paul Bocuse's restaurant and became fascinated by his chef’s outfit and kitchen brigade. Born and raised in Lyon, he would spend every summer on his father's boat or under the water, diving and chasing fish in the sea. The ocean is truly his element.
