The selection of grains
To prepare decaffeinated coffee, we select Arabica beans. These coffee beans can have up to half the caffeine of Robusta, which is why they are usually chosen (but not always, you will discover later...). The coffee bean must be green, that is, already ripe but not roasted.
The first immersion
The green coffee beans are immersed in hot water to dissolve the caffeine, maintaining the essential flavor and aromas of the coffee.
Drying
The grains, already treated, are dried with hot air.
Water treatment
While the water is pumped through an activated carbon filter that traps this component but leaves other substances that contribute to the quality of the coffee.
The repetition
In this crucial step of the decaffeination process, the caffeine extraction cycle is repeated several times to ensure that the coffee beans reach the desired level of caffeine. Generally 99.9% caffeine free.
