Chef Alain Pignard

Alain Pignard, former Chef of the Beaver Club and Queen Elizabeth, winning in 2005 (SCCPQ), is co-owner of the Palette Gourmande, in the Museum of Fine Arts area. The unique concept reflects the passions of the Chef who for 30 years worked for the development of gastronomy in Quebec.

La Palette Gourmande offers catering services for events from 10 to 1000 people. This gourmet shop, which offers the Nespresso coffee, serves pastries and fresh dishes cooked on site by the chef himself: make accessible and dietetic the haute cuisine is his wish.

Coffee Recipes

Begin your mornings with an indulgent coffee experience. Try these irresistible recipes for a whole new taste sensation.

Maple Cinnamon Coffee


  • 1 capsule of Melozio
  • 4 oz of milk
  • 1 oz of maple syrup
  • ⅛ tsp of cinnamon
  • 1 tbs of brown sugar


In a small saucepan over medium heat, combine milk, maple syrup, and cinnamon. Whisk until all have combined. Continue until brown sugar has dissolved and milk is heated through and foaming. Pour into VertuoLine Recipe Glass. Brew coffee onto the milk mixture.

Note: For an even sweeter and gourmet taste, add 1 tablespoon of brown sugar into the milk mixture. Enjoy!

Chai Coffee


  • 1 capsule of Stormio
  • 3 oz of vanilla chai tea
  • 2 tbs of sugar (for a more gourmet taste)


In a VertuoLine Recipe Glass, brew coffee. Add chai tea. For a more indulgent taste, add 2 tablespoons of sugar. Enjoy!

Hazelnut Chocolate Coffee


  • 1 capsule of Hazelino
  • 4 oz of milk
  • 3 tbs of chocolate hazlenut spread


In a small saucepan over medium heat, combine milk and chocolate-hazelnut spread. Whisk until spread is melted and milk is heated through and foaming. Pour hot milk mixture into VertuoLine Recipe glass. Brew Coffee onto the mixture. Enjoy!
