PREPARATION

  1. Preheat oven to 170C.
  2. Prepare the cake tin by coating with butter, then dusting with flour. Tap out excess flour.
  3. In a mixing bowl, whisk the butter, sugar and salt together until pale and fluffy.
  4. Add both the yolk and egg, mix well.
  5. Whisk in the coffee and milk. Then, fold in corn starch, plain flour and baking powder, mix until combined.
  6. Pour mixture into the cake tin and bake for 40min. Unmold when cool.
  7. Dust the Ciambella with icing sugar and serve

  • 140g unsalted butter
  • 140g caster sugar
  • 1 teaspoon salt
  • 1 egg yolk
  • 1 egg
  • 2 Tribute to Milano coffee capsules extracted as 25ml Ristrettos
  • 170ml milk
  • 150g corn starch
  • 150g plain flour
  • 7g baking powder
