Coffee & Chocolate mousse

Indulge yourself with not one, but three exquisite mousse flavours to savour with a rich, aromatic Ristretto!

Preparation

  • Split the butter in 3 equal pieces. 
  • Put each piece in a bowl.
  • Prepare the Grand Cru in Ristretto (25 ml / 0.75 oz).
  • Add the coffee to the 1st bowl, add chunks of the darkest chocolate to the 2nd bowl, and add the other chocolate chunks to the last bowl.
  • Melt each mixture separately.
  • Break the eggs and separate the egg yolks and the egg white.
  • Mix the egg yolks with the sugar, until you got a clear and moussy texture. 
  • Mix the egg white until they are hard. 
  • Split the egg yolk mixture equally in the three bowls and whisk the whole. 
  • Idem with the beaten egg white. 
  • Mix the whole. 
  • Put for each serving some coffee mousse, dark chocolate mousse and less dark chocolate mousse to have a fully indulgent experience!
  • If you want you can add a raspberry in each serving for the final surprise!
  • Serve a Ristretto with the mousse

  • 70 g / 2.5 oz chocolate (70%)
  • 70 g / 2.5 oz classic black chocolate
  • 70 g / 2.5 oz white chocolate
  • 100 g / 3.5 oz butter
  • 90 g / 3 oz sugar
  • 6 eggs
  • Pinch of salt
