Lemon Verbena Coffee

A bracing combination of cool foam, lemon verbena and brisk coffee for a contrasting array of flavours and textures.

Preparation

  • Prepare the lemon espuma by melting the gelatine leaves in 3dl / 10 oz of hot water.
  • Once it is completely melted pour the syrup on it.
  • Put everything in the freezer for 3 hours.
  • Make a verbena infusion and put some sugar on it.
  • Pour the verbena in the glass, pour the Cosi on it.
  • Serve with the espuma on the side.
