Silvio Galizzi’s parents, in the restaurant business in Lugano, thought he was destined to design cars, but already he secretly had his head in a saucepan.
After several years training in some of the finest restaurants in the Caribbean, New York and Malaysia – enough time to become familiar with American techniques and notions from far afield – he went back home, where the Galizzi family had been practicing elegant, top-tier cooking for years.
Not out to start a revolution, Silvio began slowly bringing about change. Respectful of his locally grown ingredients, he plays with dashes of Asia and the Caribbean. It’s a combination that won him a Michelin star and a grade of 17/20 from the Gault&Millau guide.
Silvio Galizzi opted for Espresso Forte from Nespresso, which he considered to be an obvious choice for the strong «Italianness» that he likes. He set about experimenting with recipes that treat coffee as an ingrédient in and of itself.
The result? Successful pairings, especially with meats...
