Jordi Herrera wanted to be an anthropologist before discovering cooking during a course he took at the Barcelona’s Majestic Hotel restaurant. He has been running Manairó for the past six years, after giving up a teaching job in a hotelery school. A manairó is a kind of Pyrenean elf with magical powers, and the name couldn’t be more apt for the place where this kitchen magician practices his craft. Herrera conjures novelty out of traditional dishes, such as his famous egg-fried squid rings. Working with the Nespresso Lungo Leggero Grand Cru, Herrera relied upon his mental palate, which allowed him to anticipate the taste of the dishes he had in mind before looking for the best way to express them. Jordi Herrera’s wizardry yields dishes that are at once “authentic” and very personal.
