WHERE DID WE FIND THE INSPIRATION FOR THIS ORIGINAL COMPOSITION?

To create the dense richness of the new Fortissio Lungo Grand Cru, while yet maintaining balance, we chose specific coffees, rather than the roast level. An Indian Arabica called Monsooned Malabar and a Latin American coffee are split roasted in order to generate a prominent body yet retain a rich coffee flavour, not overshadowed by roasted notes.

The creation

In 2004, we introduced the Lungo range with Vivalto Lungo, being the first intense Lungo Grand Cru. By 2009, with more developed expertise in roasting styles, grinding, capsule loading and other technical aspects that bring out flavour, we created a truly intense Lungo, the first Fortissio Lungo Grand Cru.

The renovation

In 2014, Nespresso expertise made it possible to redevelop and augment the intensity of Fortissio Lungo Grand Cru, yet not the roast level. We wanted to increase the complexity and boldness, the experience of coffee intensity in the cup, all without a darker roast.

The process

Offering deep coffee flavour and full body in such a blend was made possible by the addition of a uniquely processed Indian bean, a Monsooned Malabar. These West Indian coffee beans are exposed to monsoon winds after harvest to recreate the conditions of the long sea journeys to Europe in the age of sailing ships, thus revealing a distinguished aromatic profile.

Ingredients

  • 1 capsule of Fortissio Lungo Grand Cru
  • 3 scoops of vanilla ice-cream
  • gingerbread syrup
  • 100ml milk
  • crushed ice
  • gingerbread (decoration)

Material

  • Aeroccino
  • 1 tall Recipe Glass (350 ml / 12 oz)
  • 1 mixer / blender

Preparation

  • Poor the gingerbread syrup (2 coffee spoons) and the milk into the Aeroccino and create milk froth.
  • Put the vanilla ice-cream in the mixer.
  • Add the Fortissio Lungo and the gingerbread syrup (1 coffee spoon).
  • Mix it all.
  • Take a recipe glass and fill it with crushed ice and pour the mixture on it.
  • Poor the milk froth on top.
  • Serve with a scoop in a separate glass and add a piece of gingerbread.

  • 2cl of sugar cane syrup
  • teaspoons of whipped cream
  • 250 g / 9 oz of plain flour
  • 50 g /2 oz of rice flour
  • 100 g / 4 oz of sugar
  • 1/2 teaspoon of vanilla powder
  • 250 g / 9 oz of butter
  • granulated sugar"

Material

  • 2 Lungo Cup (2 x 150 ml/5 oz)
  • 1 Oven
  • 1 Bowl
  • 1 Food processor
  • 1 silicon backing sheet

Preparation

  • Irish Coffee:
  • Prepare the Fortissio Lungo Grand Cru in lungo (110 ml / 4 oz) with 2 cl of sugar cane syrup.
  • Pour the first preparation with the Fortissio Lungo Grand Cru into a glass.
  • Add the whipped cream and serve.

    Shortbreads:
  • Pre-heat the oven to 160 °C / 320 Fahrenheit.
  • Place both kinds of flour, the butter cut into cubes, the sugar and the vanilla in the bowl of a food processor.
  • Mix gradually to form a ball of dough.
  • Roll out the dough into a rectangle on a silicon baking sheet or on a baking tray lined with greaseproof paper and dusted with flour.
  • Cut the dough into squares with the point of a knife.
  • Bake in the oven for 15 to 20 min.
  • Leave to cool and break off the pre-scored squares.
  • Serve the shortbreads with the irish coffees
